
Who have I become?
I found myself super hungry yesterday and couldn't really explain why. Some of it was actual hunger and some of it was stress/emotional related. So I ate several snacks but you know what? If I'm eating healthy, real food that is totally Whole 30 compliant - then I'm not going to sweat it. Because there is a HUGE difference between what I wanted to stress eat and the healthy stuff I actually chose to eat. So I call that a win.
Here's what I ate yesterday:
Coffee: 3 cups with coconut cream
Breakfast: scrambled eggs w spinach, topped w salsa and guac
Lunch: veggies & dip that E made, delicious shrimp salad that E made on top of baby spinach (you have no idea how amazing it is to eat something that I haven't had to make from scratch myself - it's like a vacation)
Snack: Nick's sticks, a hand full of sulfite-free dried apricots
Dinner: Paleo shepherds pie: ground beef cooked with lots of veggies, fat drained off. Topped with a 50/50 mix of sautéed green cabbage and golden mashed potatoes. I added a bunch of rich, savory chicken stock that I made last weekend since I couldn't add butter and milk the way that God intends you to make it.
Drinky: Synergy Kombucha (on sale at Safeway! I can't believe that I like this stuff - but I do! I love it! Especially with chia seeds! Why do I keep using exclamation points?! Possibly all those probiotics?!)
So I've made it this far into Whole 30 and I'm in this weird spot where I'm comfortable in this place with all these rules, but also a little bored by them. Also, I'm so ready to start planning for the REAL challenge which is how to reintroduce foods back into my diet without backsliding into bad choices. Anyway, I found this meme and giggled at it and thought, I will use this instead of a gif today!
After I posted this, Guru texted me that I was actually on Day 20. I AM SUPER SMART.
